Happy Halloween! My mom made these for us every Halloween growing up before we would go trick-or-treating. The meat mixture and the biscuit cups can be made ahead of time and then assembled when ready to eat.
Do not use the Grands! biscuits for these as they are too big. The Grands! Juniors work well though.
- 1 1/2 pounds ground beef
- 2 tablespoons olive oil
- 1 medium onion chopped
- 1 15 oz. can tomato sauce
- 1 cup carrots shredded
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 3 cans 5 count refrigerated biscuits
- 15 Velveeta slices

Preheat oven to 400 degrees. Spray the bottom of 2 muffin pans with cooking spray.

In a large pan, brown ground beef over medium heat. Drain off the fat and put meat on a plate lined with paper towels.

Add olive oil to the pan and cook the onions until for several minutes until soft.

Put the meat back in add and the rest of the ingredients, except the biscuits and cheese. Simmer for 20 minutes.

Flatten the biscuits and stretch to shape over the bottom of the muffin tins to form cups. Bake for 8 minutes.

Cut cheese slices into jack-o-lantern faces and stir the cheese bits into the meat mixture.

Fill the biscuit cups with the meat and top with a slice of cheese. Bake for 3-5 minutes until cheese is melted.
