Word of caution – the sugared almonds in this Mandarin Orange Salad are addicting. I recommend doubling them so you can snack on them while cooking.
Mandarin Orange Salad
Ingredients
- 1/2 cup slivered almonds
- 3 tablespoons sugar
- 1 head romaine lettuce
- 1 cup celery chopped
- 2 green onions chopped
- 1 11 oz. can mandarin oranges drained
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon parsley chopped
- 1/2 teaspoon salt
- dash Tabasco
- freshly ground pepper

In a small pan, heat almonds and sugar over medium heat. Stir constantly until sugar melts and coats the almonds, being careful not to burn the sugar. Cool. If making ahead of time, store in a container.

Make the dressing by mixing olive oil and the next six ingredients.

Put lettuce, almonds, celery, green onions, oranges in a salad bowl. Toss with dressing and serve immediately.
