It’s sometimes difficult to get my daughter to eat enough protein, but she loves these protein balls. She’ll have a couple as an afternoon snack after school.
Power Protein Balls
Ingredients
- 2 cups oats
- 1 1/2 cups unsweetened shredded coconut
- 1 cup dark chocolate chips
- 1 cup peanut butter
- 1 cup pecans toasted and chopped
- 3/4 cup honey
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
Instructions

Mix all together in a large bowl.

Flash freeze for 20 minutes.

Roll into balls. Store in the refrigerator.
