This is a good side dish to make with tacos or fajitas. You can add 1-2 diced jalapeños with the onion and pepper to give this a spicier kick. Substitute vegetable broth for the chicken broth to make this vegan/vegetarian.

Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 1 green pepper chopped
- 2 garlic cloves minced
- 1 cup rice
- 1 14.5 oz. can diced tomatoes undrained
- 1 1/2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- freshly ground pepper
Instructions

Heat a medium saucepan over medium heat. Cook the onion, pepper and garlic in olive oil for several minutes until they begin to soften.

Add the rice and the rest of the ingredients. Stir to combine.

Bring to a boil. Cover and reduce heat to low.

Cook for 20 minutes or until liquid is absorbed.

Fluff with a fork and enjoy immediately.
