These beans make a great protein packed side dish or a meatless main dish. My daughter is not usually a fan of beans, but will eat these because she loves shallots.
Sautéed Cannellini Beans

Ingredients
- 2 cloves garlic sliced thin
- 2 teaspoons fresh thyme
- 2 shallots sliced thin
- 1 14 oz. can cannellini beans drained and rinsed
- salt
- freshly ground pepper
- 2 teaspoons red wine vinegar
Instructions

In a large skillet, heat the olive oil over medium heat.

Add the garlic and cook until it starts to turn brown, stirring occasionally.

Add the thyme and shallots and cook 1 minute.

Add the beans and cook for a few minutes, stirring occasionally.

Add salt, pepper and red wine vinegar and cook for a few more minutes so the flavors can blend.

Taste for seasoning and add more salt and pepper if desired.
