Sautéed Cannellini Beans

Ingredients

  • 2 cloves garlic sliced thin
  • 2 teaspoons fresh thyme
  • 2 shallots sliced thin
  • 1 14 oz. can cannellini beans drained and rinsed
  • salt
  • freshly ground pepper
  • 2 teaspoons red wine vinegar

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the garlic and cook until it starts to turn brown, stirring occasionally.

  3. Add the thyme and shallots and cook 1 minute.

  4. Add the beans and cook for a few minutes, stirring occasionally.

  5. Add salt, pepper and red wine vinegar and cook for a few more minutes so the flavors can blend.

  6. Taste for seasoning and add more salt and pepper if desired.
