Southwestern Potato Salad has so much more flavor than your typical potato salad. Tomatoes, peppers, onions and garlic combine with cilantro and lime juice to make this anything but bland. Cayenne pepper gives this a slightly spicy kick. Perfect to bring to a cookout or to serve alongside ham.
Southwestern Potato Salad
Ingredients
- 2 pounds red skin potatoes
- 1 3/4 cup mayonnaise
- 1 tomato diced
- 1/2 cup onion diced
- 1/2 cup green pepper diced
- 2-3 green onions diced
- 2 cloves garlic minced
- 2 tablespoons Dijon mustard
- 2 tablespoons lime juice
- 2 tablespoons cilantro minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon cayenne pepper
Instructions

Put potatoes in a large pot and cover with water. Cover and bring to a boil. Cook for about 20 minutes or until soft.

In a large bowl, mix everything else.

When potatoes are cooked, chop and stir into the rest of the ingredients.

Let stand at room temperature for 30 minutes before serving. Can be covered and refrigerated for up to 2 days.
