Any firm white fish would work well in this recipe. The original recipe calls for chicken, which is delicious too – just marinate for 4 hours and cook all the way through.

Ingredients
- 4 6 ounce mahi mahi filets
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 teaspoons fresh thyme minced
- 1 teaspoon lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Instructions

Combine everything except fish in a large ziplock bag.

Add fish and coat with marinade. Refrigerate for 20-60 minutes.

Preheat grill to medium high. Remove fish from marinade and grill filets a few minutes on each side or until cooked as desired.
