Mediterranean Quinoa Salad

Ingredients

  • 1 cup quinoa cooked to package directions
  • 1 (15 oz.) can garbanzo beans rinsed and drained
  • 2 avocados chopped
  • 1 English cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1 pint cherry tomatoes halved
  • 1/2 red onion chopped
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 lemon juiced and zested
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground pepper
  • 4 oz. feta cheese crumbled

Instructions

  1. In a large bowl, combine quinoa and next six ingredients.

  2. In a mason jar, add olive oil thru freshly ground pepper. Shake well to mix.

  3. Pour dressing on top of salad and stir to combine. Top with feta cheese. Serve immediately or refrigerate for later.
