Parmesan Garlic Quinoa

Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup quinoa
  • 1 3/4 cup water
  • 1/2 cup parmesan cheese freshly grated
  • 2 teaspoons basil
  • 1/2 teaspoon salt
  • freshly ground pepper

Instructions

  1. In a medium saucepan, heat olive oil over medium heat.

  2. Add onions and cook for a few minutes until softened.

  3. Add garlic and cook for another minute.

  4. Add quinoa and water. Bring to a boil, then cover and reduce heat to low.

  5. Cook covered for 15 minutes.

  6. Add parmesan cheese, basil, salt and pepper and stir well to mix.
