Mushroom Wild Rice

Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow or while onion chopped
  • 8 oz. crimini (baby bella) mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup wild rice
  • 1 3/4 cup water
  • 2 teaspoons fresh thyme
  • 1/2 teaspoon salt
  • freshly ground pepper

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add onions and mushrooms and cook for several minutes until they begin to soften.

  2. Add garlic and cook for another minute.

  3. Add remaining ingredients and bring to a boil. Cover and cook for 45 minutes over low heat.

  4. Remove from heat and let steam for 10 minutes with the lid on.

  5. Fluff with a fork and enjoy.
