Marinated Artichoke Salad

Ingredients

  • 1 large head romaine lettuce
  • 1 14 oz. can quartered artichoke hearts drained
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 3 tablespoons tarragon vinegar
  • 2 tablespoons sugar
  • 2 tablespoons onion minced
  • 1 clove garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • freshly ground pepper

Instructions

  1. Combine everything except the lettuce and artichokes in a lidded glass jar or other lidded container. Shake well to mix.

  2. Add artichokes and marinate in the refrigerator for at least 4 hours or overnight.

  3. Cut lettuce into bite size pieces and toss with the dressing. Serve immediately.
