Navy Bean Soup

Ingredients

  • 1 ham bone
  • 1 pound navy beans
  • 8 cups water
  • 8 whole peppercorns
  • 6 whole cloves
  • 1 bay leaf
  • 6 celery stalks diced
  • 4 carrots diced
  • 1 onion diced
  • 3 garlic cloves minced
  • salt
  • freshly ground pepper

Instructions

  1. Soak navy beans according to package directions.

  2. In a large pot, put ham bone, navy beans, water, peppercorns, cloves and bay leaf. Bring to a boil then simmer for about 3 hours.

  3. Add carrots, celery, onion and garlic. Cook for another 1/2 hour - 1 hour.

  4. Take out the ham bone and process with an immersion blender or in batches in a blender.

  5. Season with salt and pepper.
