Crock Pot Beef Stew

Ingredients

  • 1 1/2 pounds beef stew meat cut into bite sized pieces
  • 1 pound white potato peeled then chopped
  • 8 ounces whole mushrooms quartered
  • 4 carrots chopped
  • 2 celery chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon freshly ground pepper
  • 1 bay leaf
  • 32 ounces beef broth
  • 1/4 cup flour
  • 1/2 cup frozen peas

Instructions

  1. In a 6 quart crock pot, add the ingredients from stew meat to beef broth.

  2. Cover and cook on low for 6-8 hours, or until meat is tender.

  3. Add flour to a bowl then add a ladleful or two of the cooking liquid. Whisk until smooth.

  4. Pour flour mixture back into the crock pot and stir well to combine.

  5. Cook on high for 30-45 more minutes, or until broth has thickened.

  6. Add peas and cook until heated through, about 5 more minutes. Serve warm.
